RaccoonNoir

Fire, silence and twelve tables. A menu written by the river, cooked over fire, served in silence.

  • One star in the guide since 2019
  • Wine list of the year 2022
  • Twelve tables, one seating

01 · The house

We cook over fire, serve in silence and change the menu when the river does. Twelve tables, one seating, nothing hidden between the kitchen and you.

02 · The story

A goldsmith's workshop, kept warm since 1998.

The room was a workshop for a hundred and forty years. The furnace is still here. So is the habit of doing one thing slowly and well.

  1. 1998

    Twelve tables

Vilém Krása buys the workshop on Mostecká with the furnace still standing and opens with twelve tables, a wood fire and a menu of nine lines chalked on slate.

  2. 2004

    The first tasting menu

The slate goes. Guests are asked to trust the kitchen for the evening, and the first nine-course menu is served to a full room on a Tuesday in March.

  3. 2011

    The cellar

The vaulted cellar under the room is cleared of a century of tools and filled with nine hundred labels, most of them from growers we have sat at a table with.

  4. 2016

    Adéla takes the fire

Adéla Nováková, twelve years in the kitchen, takes over as head chef. The menu shortens, the fire grows, the room gets quieter.

  5. 2019

    The star

The guide gives the room its first star. We celebrate by closing for a week and repainting the ceiling.

  6. 2023

    The counter

Four seats are built into the pass. Guests at the counter eat what the kitchen eats, in the order it comes off the fire.

03 · Principles

Four rules, kept for twenty-seven years.

  • I

    Fire first

Every course meets the fire at some point: charred, smoked, warmed on the stone or finished over embers. Technique comes after.

  • II

    Twelve tables, one seating

The room seats thirty-two. We do not turn tables. Your evening ends when you decide it does.

  • III

    The season decides

The menu is written on Monday from what the river, the growers and the hunters brought that week. Nothing is flown in.

  • IV

    Nothing hidden

The kitchen is open, the pass is lit, the cellar is unlocked. Ask anything, see everything.

Adéla Nováková, head chef since 2016

04 · The kitchen

“A good evening here should feel like being invited to a house where someone cooks very seriously and talks very little.”

Adéla Nováková

Head chef since 2016

Trained in Lyon and Copenhagen, twelve years on the fire at Raccoon Noir before taking the kitchen. She writes the menu by hand every Monday and still works the pass six nights a week.
